Pav Bhaji Recipe – How to make pav bhaji recipe

Pav Bhaji is a fast food dish from Maharashtra, India.

 
 
 
Ingredients :
 
2 medium potatoes chopped
1/2 small cauliflower  chopped
1 medium size capsicum chopped
1/4 Brinjal  chopped
150 grams pumpkin chopped
2 carrots chopped
1/4 cabbage ( 150 grams) sliced or chopped
1/2 beetroot chopped
1 cup  green peas
2 medium onions chopped
4 medium tomatoes – puree
2 green chilies
1-inch ginger
2 -3 garlic cloves
3 tbsp butter
Salt to taste
1 tbsp pav bhaji masala
1 tsp cumin seeds
1 tsp turmeric powder
1 tsp  coriander powder
1/2 tsp red chilies powder
1/2 tsp garam masala
1/2 tsp amchur powder
Butter to toast the pav
8 Pav Buns
Chopped onion and coriander leaves to garnish
1 lemon juice (optional)
 
Method
 
  • Place all the chopped vegetables in a pressure cooker with 1/2 cup water and salt.
  • Let 2-3 whistles come on high flame, then switch off the gas and let the cooker cool.
  • Open the cooker when pressure drops and mash the boiled veggies with the potato masher.
  • Add tomato, ginger, and green chilies in a mixer jar and make a paste.
  • Heat butter in a non-stick pan and cumin seeds and saute.
  • When the color of cumin changed then add chopped garlic cloves and saute 1 minute.
  • Add chopped onion and saute until lightly golden.
  • Add tomato puree and all spices (turmeric powder, coriander powder, red chilies powder, pav bhaji masala)
  • Cook on medium heat for few minutes stirring constantly.
  • Now add mashed vegetables and cook on medium heat for 3-4 minutes stirring occasionally.
  • Add garam masala and amchur powder.
  • Turn off heat and squeeze 1 lemon in bhaji and mix. 
  • Garnish bhaji with chopped onion and coriander leaves.
  • Slice each pav bun horizontally into 2 and toast in butter.
  • Toast on both sides. 
  • Serve pav with bhaji.
