Dal makhani recipe- How to make dal makhani recipe

Dal makhani is a popular dish of Punjab state. Traditionally, dal makhani recipe is prepared by simmering it overnight in a tandoor. This would enhance the taste of dal with the mixed spices.

Ingredients:

  • 1/2 Cup – Whole black urad dal
  • 1/4 Cup – Kidney beans(Rajma)
  • 1/4 Tsp – Meetha soda
  • 1/2 Cup full-fat milk
  • 1 – Inch ginger sliced
  • 1- Green chili
  • 1- Tomato
  • 1/2 Cup- Butter
  • 1Tbsp – Oil / Ghee
  • 1/2 Tsp – Turmeric Powder
  • 1/2 Tsp – Garam masala
  • 3 Tsp – Coriander Powder
  • 1/2 Tsp – Red chili powder
  • 1/2 Tsp – Amchur powder or dry mango powder
  • 1/2 Tsp Cumin Seeds
  • Salt to taste
  • Water as per need


Method:

  • Soak urad dal and rajma overnight in enough water for 8 to 9 hours. Later drain them well.
  • Rinse both the lentils a couple of times with water.
  • Drain again and then add them in a pressure cooker. Add 3 cups water and stir well.
  • Cook on high flame until the first whistle then on low flame till second whistle and then turn of the flame.
  • After 5 to 7 minutes check if the lentils have been cooked properly if not then add 1 cup water again and cook till  2 -3 whistles on high flame.
  • Now take 1/4 of the lentils cooked in a blender or mixer jar and add 4 to 5 cube of ice and grind the lentils.
  • Add this paste in the cooker and add 1 cup of water, and garam masala and mix it well and cook till 2-3 whistles.
  • Now make a paste of tomato, ginger and green chili in a mixer.
  • Now to prepare tempering place a pan on high flame and then add 1 tbsp of oil/ghee and cumin seeds.
  • Once the color of cumin seeds changes add turmeric powder and tomato paste and stir well.
  • Now add other spices like red chili powder, coriander powder and stir well.
  • Cook this paste for 2- 3 minutes till ghee/oil separates from the paste.
  • Add full fat milk and keep stiring.
  • Now add the lentils prepared and stir well and add garam masala and amchur powder cook for 1-2 minutes.
  • Garnish with cream and butter.
  • Now dal makhani is ready to serve.
