Baingan bharta recipe- How to make baingan bharta without onion and garlic

Baingan Bharta is a South Asian dish, that originated in Punjab.

Ingredients:

  • 1 large Brinjal(Baingan/eggplant)
  • 1 tsp oil
  • 1 tsp ghee
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 2 tsp coriander powder
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • 1/2 tsp dry mango powder
  • 2 large tomatoes
  • 2 tbsp fresh peas
  • 1 tsp ginger paste
  • 1 green chili finely chopped
  • 1 pinch of asafoetida
  • Coriander leaves for garnishing

Method:

  • Rinse the baingan with water and pat dry with a kitchen napkin.
  • Pork the skin of baingan at multiple places with a fork.
  • Apply some oil over the surface of baingan with a brush.
  • Place it on a burner and roast it on open flame till it is cooked.
  • Keep turning the baingan at regular intervals to cook it evenly.
  • Cool and peel the skin and mash the pulp thoroughly and keep aside.
  • Heat the ghee in a pan and add cumin seeds.
  • When they crackle add a pinch of asafoetida and ginger paste and chopped green chili and saute.
  • Add turmeric powder and peeled and chopped tomatoes and saute.
  • Add peas and salt and cover the lid and cook for 5 minutes.
  • After that add red chili powder, coriander powder, and mashed baingan and mix it well.
  • Cook for 2 -3 minutes.
  • Add garam masala and dry mango powder.
  • Serve with chapati or rice.
