Lotus Seed is rich in protein and calcium. Makhane are rich in protein and carbohydrate and have significant medicinal values. Makhane are usually eaten in fast. Makhane ki kheer, it is a delicious dessert and simple to make. Phool makhane ki kheer is a dessert that is often made during navratri fasting or vrat. It will surly linger on your taste buds.
Ingredient:
- 1 Cup makhane (lotus seeds or fox nut)
- 1 Tablespoon ghee
- 2 Cup milk
- 3 Cashew nut chopped
- 3 Almonds chopped
- 7-8 raisins
- 1 teaspoon cardamom powder
- 2 Tbsp sugar
- 7-8 saffron strands
Method:
- Heat ghee in a nonstick pan, add the lotus seeds and saute on a low flame until they turn crisp.
- Chopped 3/4 lotus seeds.
- Reserve 1/3 lotus seeds and blend in a mixer to a coarse mixture.
- Boil the milk in a deep non-stick pan.
- Add coarse mixture into milk and remaining 3/4 makhana and saffron strands.
- Stir very well.
- Cook on a low flame till lotus seeds soften and milk become thickens a bit and stirring occasionally.
- Add chopped cashew nut, almonds,raisins and cardamom powder.
- Serve hot and garnish with almonds and cardamom powder.
