Stuffed Capsicum Ring

Stuffed Capsicum recipe – Bharwan Shimla Mirch recipe – Stuffed Capsicum with spiced potato

Ingredients:

  • 3 medium size capsicum
  • 2 medium size boiled potatoes and mashed
  • 2 tbsp oil
  • A pinch of asafoetida
  • 1 green chili chopped
  • 1/2 tsp ginger paste
  • 1/2 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1 tsp coriander powder
  • 1/4 tsp garam masala powder
  • 1/4 tsp dry mango powder
  • Salt to taste

Method:

  • In a frypan, heat 1 tsp oil. Add cumin seeds when they splutter add asafoetida, ginger paste, and green chili.
  • Mix well. Add turmeric powder and mashed potato and red chili powder, coriander powder and mix well and saute for 5 minutes.
  • Then add garam masala powder and dry mango powder.
  • Slice off the tops of capsicum and remove the seeds.
  • Now sliced capsicum horizontally.
  • With a spoon stuff capsicum with spiced potato.
  • Heat oil in a pan and place stuffed capsicum carefully in a pan.
  • Cover the pan and allow the stuffed capsicum to cook on a low flame.
  • After 2 minutes change the sides and again cook for 2 minutes.
  • Sprinkle some garam masala powder and dry mango powder.
  • Stuffed capsicum is ready to serve. Garnish with coriander leaves.
