Stuffed Capsicum recipe – Bharwan Shimla Mirch recipe – Stuffed Capsicum with spiced potato
Ingredients:
- 3 medium size capsicum
- 2 medium size boiled potatoes and mashed
- 2 tbsp oil
- A pinch of asafoetida
- 1 green chili chopped
- 1/2 tsp ginger paste
- 1/2 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1 tsp coriander powder
- 1/4 tsp garam masala powder
- 1/4 tsp dry mango powder
- Salt to taste
Method:
- In a frypan, heat 1 tsp oil. Add cumin seeds when they splutter add asafoetida, ginger paste, and green chili.
- Mix well. Add turmeric powder and mashed potato and red chili powder, coriander powder and mix well and saute for 5 minutes.
- Then add garam masala powder and dry mango powder.
- Slice off the tops of capsicum and remove the seeds.
- Now sliced capsicum horizontally.
- With a spoon stuff capsicum with spiced potato.
- Heat oil in a pan and place stuffed capsicum carefully in a pan.
- Cover the pan and allow the stuffed capsicum to cook on a low flame.
- After 2 minutes change the sides and again cook for 2 minutes.
- Sprinkle some garam masala powder and dry mango powder.
- Stuffed capsicum is ready to serve. Garnish with coriander leaves.
