Oats upma


Serving for four people

Ingredients

1 cup oats
2 onions chopped
2 medium-sized carrot chopped
Half cup peas
1/2 tsp turmeric powder
1/4 tsp red chili powder
1 tsp coriander powder
2 tsp oil
1/2 tsp mustard seeds
1 tsp urad dal
7-8 curry leaves
1 green chili
Salt to taste
Chopped coriander leaves

Method

Heat 1 tsp oil in a pan and add turmeric powder and oats and saute on a medium flame till it turns light brown in color, stirring continuously.
Heat remaining 1 tsp oil and add mustard seeds.
When seeds crackle adds urad dal, curry leaves, green chili and chopped onions.
Saute till onions turn translucent.
Then add turmeric powder, chopped carrots and green peas, salt, red chili powder and mix well.
Cover with lids for 3 minutes.
Add roasted oats and mix well and cook for 1 minute and add 1/2 cup hot water and stir occasionally.
Serve immediately and garnish with coriander leaves.
