Sweet pudding made with tapioca pearls or sabudana and milk. We generally make sabudana kheer during some of the fasting or vrat days. This is a popular Indian pudding that is made with tapioca pearls for religious fasting days.
Ingredients:
- 1-liter full-fat milk
- 1 cup Sabudana or tapioca pearl or sago
- 1 tbsp chopped dry almond
- 7-8 saffron strands
- 1 teaspoon cardamom powder
- 1 cup of sugar
Method:
- Wash sabudana with running water and soaked in two cups of water for 2 hours.
- Heat milk in the heavy bottom pan and bring it to boil.
- Add soaked sabudana in boiling milk.
- Stir well and let it simmer on low flame for 20 minutes.
- Do stirring occasionally and make sure sabudana or milk is not sticking on pan’s bottom.
- Sabudana should be transparent and soft.
- Take ladleful of kheer and pull it back when sabudana and milk fall together with the same flow,
- Then add sugar, cardamom powder, saffron strands chopped almonds and continue stirring.
- When sugar melt, kheer become thin.
- Now simmer for 6-7 minutes.
- Now kheer is ready to serve.
- You can serve after cools down and do garnish with chopped almonds.
