Spaghetti Aglio E Olio is a traditional Italian pasta dish. The key is slowly toasting the garlic slices to a perfect golden brown in the olive oil.

Ingredients:

200 grams spaghetti
1 tablespoon parsley
3-4 cloves of garlic, thinly sliced
1 teaspoon red chili flakes
1 tablespoon olive oil
Salt to taste
1/2 teaspoon black pepper

Method:

  • Bring a large pot of lightly salted water to a boil.
  • Don’t break the spaghetti, keep them whole and place in water.
  • Once they start cooking, they will start settling down in the water.
  • Cook spaghetti in the boiling water, stirring occasionally until cooked through but firm to bite.
  • Drain and place them in a bowl and cover it.
  • Heat olive oil in a pan add chopped garlic.
  • Add salt and saute garlic lightly until lightly brown.
  • Add this mixture to the spaghetti.
  • Add red chili flakes and parsley.
  • Season with salt and black pepper.
  • Mix well and serve the Spaghetti Aglio E Olio immediately.
