Ingredients:

1 cup boiled corn kernels
2 1/2 cup palak (spinach)
1/2 cup onion finely chopped
2  tomatoes
1-inch ginger
1 green chili
2 tsp oil
A pinch of asafoetida
1 tsp cumin seeds
1 tsp turmeric powder
1 tsp coriander powder
1/2 tsp red chili powder
Salt to taste
1/2 tsp garam masala
1/2 tsp dry mango powder

Method:

  • In a blender add tomato, ginger and green chili and make a fine paste and keep aside.
  • Rinse the spinach very well in water. 
  • Boil water with some salt. 
  • Let the water comes to a boil, then switch off the flame and add spinach leaves in this boiling water.
  • Let the spinach leaves be immersed in the water for 2-3 minutes.
  • Drain and quickly pour ice water over the spinach.
  • Add this to a blender and make a smooth paste and keep aside.
  • Heat oil in a pan and add cumin seeds when seeds are brown then add asafoetida and chopped onion.
  • Saute onion till brown in color.
  • Now add turmeric powder and mix well.
  • Add tomato paste and red chili powder, coriander powder, and garam masala and saute until oil starts to leave the sides of the paste.
  • Now add spinach puree or paste and salt and mix well.
  • Now add boiled corn and mix well.
  • Simmer the whole curry 6 to 7 minutes on a low flame.
  • Add dry mango powder and mix well.
  • Our palak corn is ready to serve.
