Arbi fry masala is made by frying the arbi instead of the traditional way of boiling. Today I am going to share my mom’s recipe fry arbi masala. Normally we make arbi either dry or with gravy by boiling it.

Ingredients:
- 250 grams arbi
- oil for frying
- a pinch of asafoetida
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/4 teaspoon red chili powder
- salt to taste
- 1/2 teaspoon carom seeds
- 1/2 teaspoon cumin seeds
- 1-inch ginger grated
- 2 green chilis
- 1/2 teaspoon garam masala
- 1/2 teaspoon dry mango powder
Method:
- Peel all the arbi and wash it and then cut long like french fries.
- Heat the oil in the wok and deep fry the arbi till they turn golden brown in color.
- Remove on kitchen towel.
- Heat one teaspoon oil in another pan and add asafoetida and add carom seeds.
- Now add turmeric powder and fried arbi and all the masalas and mix well.
- Cover and cook for 2-3 minutes.
- Serve hot.
