Besan wali arbi is a very healthy and full of flavor. It tastes as good with roti/ chapatti/dal and rice. The flavor of besani arbi is tempting and I am sure you will enjoy each bite of this.

Ingredients:

  • 250 grams arbi
  • 1 tablespoon gram flour(besan)
  • 2 tablespoon oil
  • A pinch of asafoetida
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon carom seeds
  • 1 teaspoon fennel seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon dry mango powder
  • 1 green chili
  • 1/2 lemon juice
  • 1 tablespoon chopped coriander leaves
  • Salt to taste

Method:

  • Wash arbi and put them in the cooker with one glass of water to boil.
  • After one whistle goes off turn off the gas.
  • Once the cooker cools down to open it up and take out the arbi and cool them off.
  • Peel arbi and cut them lengthwise into two halves.
  • Now heat oil in a pan and add cumin seeds, asafoetida, carom seeds, fennel seeds, turmeric powder and besan.
  • Saute for one minute and then add boiled arbi, red chili powder, coriander powder, garam masala powder.
  • Mix well and cook for 2 minutes after two minutes change the side of arbi, mean upper side down.
  • And again let the cook for 2 minutes.
  • Add dry mango powder and lemon juice.
  • Serve hot with roti or paratha and garnish with chopped coriander leaves.
