Phirni is a wonderful, creamy dessert made with ground rice combined with milk, sugar and saffron strands and almonds. The key to a good phirni is to grind the rice well.
The key to a good phirni is to grind the rice well. Phirni is traditionally served in small earthen bowls also called as Shikoras.

Ingredients:
- 500 ml of full-fat milk
- 2 tablespoon rice
- 2 1/2 tablespoon sugar powder
- 1/2 teaspoon cardamom
- 7-8 strand of saffrons
- 7-8 almonds
Method:
- First, wash the rice and soaked for 1 hour and drained.
- Blend the rice in a mixer to a coarse paste without using any water. Keep aside.
- Boil the milk in a deep non-stick pan on a medium flame.
- Add the rice paste and saffron strand and mix well and cook on a slow flame for 25 to 30 minutes.
- While stirring continuously and scraping the sides of the pan.
- Add sugar and mix well and cook on a medium flame for 3 to 4 minutes.
- Switch off the flame, and add cardamom powder and chopped almonds and mix well.
- Keep aside to cool completely.
