Bharwa baingan is spicy eggplants stuffed with Indian whole spices. This recipe is a traditional north Indian cuisine.

Ingredients:
  • 250 grams Brinjal
  • 2 tablespoon oil
  • A pinch of asafoetida
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chilli powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon dry mango powder
  • Salt to taste

Method:
  • Wash and slit in the center to make a criss-cross mark that divides each brinjal into 4 parts joined at the stem.
  • Mix all the spices and fill in the brinjal’s slit.
  • Heat a wok and add oil and asafoetida and cumin seeds.
  • When cumin seeds crackle, add turmeric powder and stuffed brinjal.
  • And little salt as we already add in masala. 
  • Mix well and cover it.
  • Cook for 5 to 7 minutes. 
  • Keep stirring occasionally when cook from all sides turn off the gas.
  • Add dry mango powder and mix well.
  • Serve with roti and paratha.
