Idli is a famous South Indian recipe that can be twisted in different ways. This variation of idli is a healthy one as it is made using fresh vegetables. Vegetable Rava idli recipe is colorful, yummy idli that is great to be served for breakfast or evening snacks or can even be packed in child’s lunch box.

Ingredient:
- Oil – 4 teaspoon
- Mustard seeds- 1/2 teaspoon
- Cumin seeds – 1/2 teaspoon
- Chana dal – 1 teaspoon
- Semolina – 2 cup
- Curd – 1 cup
- Curry leaves – 8
- Turmeic Powder- 1/2 teaspoon
- Salt to taste
- Onion – 1 medium sized chopped
- Tomato – 1 medium sized chopped
- Carrot – 2 medium sized chopped
- Peas – 1/4 cup
- Capsicum- 1/4 cup chopped
- Eno(fruit salt)- 1 pouch
Method:
- Heat a pan add 3 teaspoon oil and add mustard seeds, cumin seeds, chana dal and curry leaves and saute for a minute.
- Now add semolina and roast well.
- Roast for 5 minutes or until the semolina turns aromatic.
- Cool the semolina completely and transfer to a bowl.
- Heat 1 teaspoon oil in another pan and add 1/4 teaspoon cumin seeds and roast for one minute.
- Add chopped onion, carrot, capsicum, peas and tomato and saute and add turmeric and salt and mix well.
- Cover it and cook for 2 minutes.
- Cool it and add in semolina and mix it.
- Add curd and mix well to forming a thick batter.
- Add water and mix well forming a smooth batter.
- Grease the idli plate with oil and just efore steaming add a 1 pouch eno (fruit salt)
- Pour the batter immediately into the idli plate. Do not rest the batter.
- Steam the semolina idli for 13 minutes on medium flame.
- Finally,serve instant semolina idli with coconut chutney.
