Achari khichdi recipe, Pickled khichdi recipe, Kathiawadi acharya khichdi, masala khichdi, how to make achari khichdi
‘Khichdi’ is a seasonal one-pot-meal. We generally enjoy it in monsoon or winter. I used mango pickle in this khichdi. The process is very simple, no need to fry or cook anything separately, everything will be cooked in one pot and one time.
Ingredients:
- 1 cup rice
- 1/2 cup green moong dal
- 2-3 tablespoon ghee
- 1 cup chopped veggie
- 1/2 teaspoon turmeric powder
- Salt to taste
- 1/4 teaspoon red chili powder
- 1/4 teaspoon mustard seeds
- A pinch of asafoetida
- 1 tablespoon mango pickle
- 1/2 teaspoon onion seeds(kalungi)
- 1/4 teaspoon cumin seeds
- 1/2 teaspoon fennel seeds(saunf)
- 1 teaspoon chopped ginger
- 1/4 teaspoon garam masala
Method:
- In a bowl take rice and moong dal and wash them properly with water.
- Soaked in water for half an hour.
- After that drain all water.
- Heat one tablespoon ghee in a pressure cooker.
- Add cumin seeds, mustard seeds, onion seeds, funnel seeds, asafoetida and saute for a minute.
- Add chopped ginger and saute.
- Add chopped veggies and mix it.
- I used carrot, cauliflower and peas.
- Add turmeric powder,red chilly powder,garam masala and salt and mix well.
- Add soaked rice and moong dal and water and mix it.
- Add mango pickle and cover the lid.
- Cook for 2 whistles and leave for 10 minutes to cool down pressure.
