Bhutte Ka Kees recipe, grated corn snacks, how to make Bhutte ka kees

Special street food of Indore-Malwa, Bhutte ka kees is prepared with fresh soft milky- creamy corn, will be liked by you all for its unique flavor.
Bhutta means “corn” and “kees” means “grated”. Actually, Bhutta is the Hindi word for corn and kees is the Marathi word for grated.

Ingredients:

  • Corn – 3
  • Milk- 1 cup
  • Ghee – 2 tablespoon
  • Asafoetida – a pinch
  • Cumin seeds – 1/2 teaspoon
  • Green chilly – 1 finely chopped
  • Ginger – 1 inch (grated)
  • Turmeric powder – 1/4 teaspoon
  • Salt to taste
  • Red chilly powder – 1/4 teaspoon
  • Sugar – 1/2 teaspoon
  • Lemon juice – 1 teaspoon
  • Fresh coconut – 2 to 3 tablespoon (grated)
  • Fresh coriander leaves – 1/2 cup chopped

Method:

  • Grate the corns and take out the pulp.
  • Heat ghee in a pan.
  • When ghee is hot, add asafoetida, cumin seed, and mustard seeds.
  • When cumin seeds became light brown add ginger, green chilly, turmeric powder, and corn paste.
  • Stir constantly until there is a slight change in color.
  • When the paste is roasted add red chilly powder, milk, and sugar and stir constantly until it simmers once.
  • After it simmers, add salt and mix well.
  • Cover and cook on low flame.
  • Cook the kees for 5 to 6 minutes.
  • When the corn kees is cooked, ghee starts separating from it.
  • Add some green coriander leaves and lemon juice into it.
  • Delicious corn kees is ready to serve.
  • While serving garnish with green coriander sprigs and grated coconut.
