A perfect and quick dessert for celebrations. Sheer Khurma is a rich Mughlai vermicelli pudding made with milk, lots of nuts, dates, and sugar. Its often made during Eid. This Eid recipe is a traditional delicacy which is made differently in different households.
Sheer stands for milk and khurma stands for dates in the Persian language.
Sheer Khuma is mainly served after the morning Eid prayer as breakfast because of the rich and healthy nutrients it has to offer.
Ingredients:
- 1 liter or 4 cups – full-fat milk
- 4 tablespoon – clarified butter(ghee)
- 150 ml – condensed milk
- 3/4 cup – vermicelli (seviyan)
- 4 green cardamom pods, crushed, seeds only
- 7-8 strands of saffron
- 7-8 pieces of almonds chopped
- 7-8 pieces of pistachios chopped
- 7-8 pieces of cashew nuts chopped
- 4-5 pieces of dry dates
- 1 teaspoon melon seeds
- 8-10 pieces of raisins
Method:
- Soak dry dates for 7 hours and then chopped and remove seeds.
- Soak saffron strands in one tablespoon milk.
- Take a pan and add 1-liter milk and bring it to a boil.
- Take another pan and add 2 tablespoon ghee and roast all nuts( almonds, cashew nuts, pistachio, dates, melon seeds, raisins).
- Roast on low flame till they turn golden brown, aromatic, and transfer it in boiled milk.
- heat 2 tablespoon ghee and add 3/4 cup vermicelli and roast on low to medium flame till light golden brown.
- transfer this in milk and stir occasionally to prevent milk from burning.
- lower the flame and simmer for 10 minutes till seviyan cooks completely.
- add condensed milk and give a good stir.
- Now add cardamom powder and mix it.
- switch off the flame and cover it for 10 minutes.
- Serve Sheer khurma hot or chilled topped with more dry fruits.
