Bhindi do pyaza recipe, how to make bhindi do pyaza
Bhindi do pyaza is a north Indian dish made from okra and double amount of onions.
The Hindi name for okra/ladyfinger is bhindi and for onions is pyaz. Do in Hindi means twice or double. this recipe uses double amount of onions than what is used generally. It is an ideal dry curry to be served with roti or chapati for lunch or dinner.
Ingredients:
- 250 grams – ladyfinger
- 3 medium-size -onions
- 2 tablespoon – curd
- 3 tablespoon – oil
- 1 teaspoon – cumin seeds
- a pinch of asafoetida
- 1/2 teaspoon – turmeric powder
- 1 teaspoon – coriander powder
- 1/4 teaspoon – red chili powder
- 1/4 teaspoon – garam masala
- 1/4 teaspoon – dry mango powder
- Salt to taste
- 2 tablespoon fresh coriander leaves
Method:
- Firstly wash the bhindi in running water.
- Then wipe them with a kitchen napkin.
- Trim both ends of the bhindi.
- Slit each bhindi vertically without breaking or cutting into two halves.
- In a bowl add turmeric powder, coriander powder, red chilly powder, garam masala, and salt and mix well.
- Add curd and mix well. Our stuffing is ready.
- Take one bhindi and stuff it with the prepared masala.
- Repeat with the remaining bhindis.
- Make sure to stuff them well with a generous amount of masala.
- Heat the oil in a pan and add asafoetida and cumin seeds.
- When seeds crackle then add sliced onions and saute for a minute.
- Add the stuffed bhindi and mix and cover with a lid and cook it for 5 to 7 minutes on low flame.
- Stire occasionally.
- When bhindi is cooked add dry mango powder and mix well.
- Garnish with coriander leaves.
