Paneer Masala is a North Indian recipe made using paneer, tomatoes, onions, and a variety of spices.
A unique way of preparing favorite paneer masala curry to roadside restaurants in India. The food served in Dhaba’s were nutritious and tasty with less fancy and easily available ingredients. Paneer masala recipe is once such recipe which is prepared in typical Punjabi Dhaba style.

Ingredients:

  • 250 grams – paneer pieces
  • 1 tablespoon – gram flour
  • Salt to taste
  • 1/2 teaspoon – red chilly powder
  • 1/2 teaspoon turmeric powder
  • 2 -3 tablespoons ghee/clarified butter
  • 2 tablespoon oil
  • 1 teaspoon cumin seeds
  • 3 cloves
  • 1/2 inch of cinnamon
  • 2 dry red chilies
  • 1/4 teaspoon asafoetida
  • 2 green cardamom
  • a bay leaf
  • 3 fine chopped onions
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 4 tomatoes puree
  • 1/4 cup yogurt
  • 2 slit green chilies
  • 1 teaspoon fenugreek leaves
  • Fresh coriander leaves

Method:

  • For marination, in a bowl add paneer cubes and add salt, red chilly powder, and turmeric powder and leave it for 30 minutes.
  • Dry roast gram flour on medium to flame and keep aside.
  • Heat a pan and add 2 tablespoons ghee and roast marinated paneer cubes and keep aside.
  • Heat 2 tablespoon ghee and add cumin seeds.
  • when seeds crackle adds red chilly, bay leaf, cinnamon stick, cardamoms, cloves, and asafoetida, ginger-garlic paste.
  • Now add chopped onions and saute well.
  • when the onion got light pink add salt and saute
  • Then add roasted gram flour and saute.
  • Saute till onions red.
  • Add tomato pulp and saute till it releases oil.
  • Now add turmeric powder, red chili powder, coriander powder, and garam masala and mix well.
  • now add yogurt and mix continuously.
  • now add crushed fenugreek leaves and paneer cubes.
  • Finely mix well and covered for 2 minutes.
  • So that paneer absorbs the spices.
  • Now our paneer masala is ready to serve.
