Dal DhokliRecipe, how to make traditional Gujarati dal dhokli 

A traditional Gujarati one-pot meal dish that is made by simmering wheat flour dumplings in thin Gujarati dal. To add on that, it is then tempered with ghee, asafoetida, cumin seeds, mustard seeds, curry leaves, green chilly – result, an incredibly delicious meal that you just cannot miss eating.
Dal Dhokli is good, perfect meal if you have a toothache or recovering from illness.

Ingredients:

  • 1/2 cup split pigeon peas(toovar dal)
  • 1/2 cup Wheat Flour
  • 1/2 teaspoon carom seeds (ajwain)
  • 1 tablespoon gram flour (besan )
  • 1/4 teaspoon + 1/4 teaspoon turmeric powder
  • 1/2 teaspoon + 1/2 teaspoon red chili powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • A pinch of Asafoetida
  • 1 dry red chili
  • 1 sprig Curry leaves
  • 1 teaspoon lemon juice(half lemon)
  • 1 tablespoon sugar
  • 2 tablespoon ghee
  • 1/4 inch grated ginger
  • 1 chopped green chilly
  • A handful of fresh coriander leaves

Method:

  • Wash toovar dal under running cold water till water runs clear.
  • Now add 2 cups of water and soak it for 30 minutes.
  • Meanwhile, make the dough for dhokli.
  • for dhokli, In a bowl add wheat flour, besan, ajwain, salt, red chilly powder, turmeric powder, coriander powder, and 2 teaspoon ghee and mix well.
  • Now start kneading the dough by adding little water at a time. Make smooth and little stiff dough.
  • Keep it aside covered for 10 minutes.
  • After the dough resting time, knead again and divide the dough into 12 to 15 equal portions.
  • Make a ball out of it and flatten it between your palm.
  • Drain the dal in a strainer and take dal into the pressure cooker.
  • Add salt and 2 cups of water and dhokli one by one.
  • So that they should not stick to each other.
  • Cover with the lid and let it cook for 2 whistles. Then turn off the flame.
  • Let the pressure go down by itself.
  • Heat a wok and add 2 teaspoon ghee and add a pinch of asafoetida.
  • Add cumin seeds and mustard seeds when seeds crackle add dry red chilly, grated ginger, chopped green chilly, curry leaves and turmeric powder.
  • Mix well and add 1/2 cup water and red chilly powder.
  • Add dal and dhokli and bring it to boil.
  • cover with a lid and cook for 2 minutes.
  • Stir it and add sugar and lemon juice and finely add chopped fresh coriander leaves.
  • Our dhokli is ready to serve hot.
