These bites can be prepared in a jiffy. The taste is really amazing. These bites are crispy from outside and soft from inside.
Ingredients:
- 1/2 cup singhara(water chestnut) flour
- 1 boiled potato
- 1/2 cup grated bottle gourd (lauki)
- 1/2 teaspoon grated ginger
- 1 chopped green chilly
- 1/4 teaspoon black pepper
- Salt to taste (sendha namak)
- 1/2 teaspoon cumin seeds
- 1/4 cup freshly chopped coriander leaves
- 2 tablespoon ghee
- Oil for frying
- Water as per requirement

Method:
- In a bowl add flour and little water and make a kernel free paste.
- Add boiled potato, grated lauki, ginger, green chilly, black pepper, salt, cumin seeds, chopped coriander leaves and mix it.
- Add more water and make a thin batter.
- Now heat a wok and add 1 tablespoon ghee and add batter and cook it.
- Keep stirring till the batter becomes thick.
- We have to make it consistent like dough.
- Add 1 tablespoon ghee and mix it. Then switch off the flame.
- Grease a plate and spread batter on it. And make 1/2 inch thick layer.
- Leave it for 20 minutes until it becomes cool and set.
- Now cut in square pieces.
- Deep fry or shallow fry these bites as per the requirement.
- Serve hot with green chutney or coconut chutney.
- Note: You can store the square pieces in an airtight jar in the refrigerator for at most 1 week.
