Rabdi is a traditional Indian dessert. Generally, we made during festivals or on special occasions. Custard Apple Rabdi or Sitaphal Rabdi is a traditional Indian dessert made with fresh custard apple.
Custard apple is a storehouse of antioxidants and nutrients and lends its own sweetness and taste to this dessert.
Ingredients:
- 1-liter full-fat milk
- 1 cup pulp of Sitaphal (custard apple)
- 4 tablespoon sugar
- 1 teaspoon cardamom powder
- 4 – 5 chopped almonds
- 4-5 chopped pistachios

Method:
- For making sitaphal rabdi recipe, de-seed the custard apple and collect the pulp in a bowl and keep aside.
- Pour the milk in a heavy bottom pan and bring it to a boil.
- When it comes to a boil, simmer the heat.
- Let it simmer till it is reduced to half.
- In between occasionally keep stirring.
- The trick to making a great Rabdi is to constantly scrape the sides of the vessels during preparation so that it doesn’t burn and gives the Rabdi consistency and texture.
- Add sugar and cardamom powder.
- Cook till it thickens a little bit more.
- Remove the rabdi from heat and pour it in a bowl.
- Let it cool completely.
- Add custard apple’s pulp in cooled rabdi and mix well.
- Garnish with almond and pistachio slivers.
- Chill in the refrigerator for 3 -4 hours.
- Serve chilled.
