Rajasthani Korma Roti Recipe, Korma Pudi Recipe (Crispy Green Moong Dal Roti)
A Rajasthani specialty, Korma Roti is a crisp paratha made from whole wheat flour and ground lentils(dal) and flavored with various spices. Although Rajasthani Korma Roti is a complete filling meal in itself, it’s best served with potato curry, yogurt, and pickle.
Ingredients:
- 1/2 cup green moong dal
- 1 cup whole wheat flour
- 1 teaspoon red chili powder
- 1/4 teaspoon turmeric powder
- Salt to taste
- 1 teaspoon cumin seeds
- 1/4 teaspoon carom seeds
- 2 green chilies
- 1/4 cup ghee
- Water as needed
Method:
- Take the whole moong dal in a mixture and grind them coarsely. Now soak the coarse mixture in enough water for 3-4 hours.
- After soaking they will absorb all the water, if you have any extra water drain them.
- In a bowl take the soaked moong dal, add wheat flour, oil, red chili powder, carom seeds, turmeric powder, salt to taste.
- Mix them well add little water if needed and make a dough like a chapati dough.
- Leave the dough covered for 20 mins. Divide them into equal parts.
- Roll each ball using a rolling pin like chapati(I made them mini size but you can make them large also) meanwhile heat a tawa.
- Place the rolled korma roti on the hot tawa, drizzle some oil as needed and cook the roti from both sides.
- Keep the roti pressing with a ladle while roasting as it will make the roti crispy.
- Do the same for the rest of the dough.
- Enjoy this crispy roti.
