Come Winter and my kitchen opens to Bharelo Bajra ka Rotla. Flavors of fenugreek leaves, fresh garlic, green onion packed into crispy Bajra ka Rotla.
Ingredients :
- 1 teaspoon ghee
- 2 teaspoon finely chopped green onion
- Some finely chopped green chilies
- 3-4 teaspoon finely chopped onions
- 1 cup methi (well rinsed & finely chopped)
- 1 teaspoon Kasuri methi (optional for fragrance)
- Salt as per taste
- some finely chopped coriander
- 1 cup bajra(pearl millet) atta
- Water (to kneed dough)
- Some wheat flour (to sprinkle while rolling)
- Ghee/butter (for frying)
Method :
To Make Stuffing:
- Heat up the pan, add 1 tsp oil/ghee in it.
- Add 2 spoon finely chopped garlic
- Add some finely chopped green chillies
- Add 3-4 tbs finely chopped spring onions
- Add 1 cup methi (well rinsed & finely chopped)
- Add 1 tsp kasuri methi (optional for fragrance)
- Add salt as per taste
- Add some finely chopped coriander, mix it well and turn off the stove quickly.
To Make Dough :
- Take a mixing bowl, add 1 cup bajra(pearl millet) atta
- Add salt as per tasteAdd some water, kneed it and make dough.
- Further kneed it well for another 5 mins to make it softer.
- Then roll out few big size balls from dough.
- Flatten the dough balls with hands, make a cavity and add stuffing in the middle.
- Gently grab the edges and seal to form a tight ball
- Gently tap the stuffed dough ball within your palms so that the mixture is evenly distributed.
- Place it on a flat surface, sprinkle some wheat flour on it.
- Now tap the stuffed ball and flatten it with your hand to form a thick roti.
- (You can roll this stuffed rotla also with the help of rolling board and rolling pin).
- Now heat up the pan, place roti on it, and cook it for 7-8 mins on medium flame until it turns golden-brown.
- Then flip it and apply 1/2 tsp ghee/butter on and around the roti.
- (Make more rotlas following the same procedure)And then your Winter Treat Healthy Stuffed Bajre Ka Rotla is ready!!!
- Serving it with curd tastes yummy.
