Ingredients:
- All-purpose flour – 1 cup
- Sugar – 2/3 cup
- milk – 1/2 cup
- curd – 1/4 cup
- oil – 1/4 cup
- cocoa powder – 2 tablespoon
- Vanilla essence – 1/2 teaspoon
- baking powder – 1 teaspoon
- baking soda – 1/2 teaspoon
- white compound – 100 gm
- fresh cream – 50 gm
- coffee powder 1 1/2 teaspoon
- Dark compound – 150 gm
- Fresh cream – 75 gms
- Whipping cream – 1 cup
- Sugar syrup for soaking (¼ cup water and ½ tbsp sugar)
Method:
- Preheat oven at 180 C for 10 minutes.
- Grease the baking pan with oil and flour it well and tap out the excess flour.
- In a medium bowl, sift the flour,cocoa powder, baking soda, baking powder.
- In a large bowl, add the oil and powder sugar and beat till the sugar is well combined.
- Add curd and mix till combined.
- Add the flour and mix.
- Gradually add milk to make a smooth batter.
- Pour the batter in cake tin.
- Smooth the top lightly.
- Bake in the preheated oven for 30 to 35 minutes till a skewer inserted in the center of the cake comes out clean.
- Cool on a wire cake rack for 10 minutes and invert the cake onto the rack to cool completely.
- Melt the white chocolate and add fresh cream and mix, our white ganache is ready.
- Melt the dark chocolate and add fresh cream and mix, our dark chocolate ganache is ready.
- Mix coffee powder into 2 teaspoon water.
- Whip the cream and separate it into two parts.
- In one part add coffee powder and other part add dark chocolate ganache.
- Now soak your sponge with sugar syrup.
- Apply a layer for whipped cream with ganache and then sprinkle some choco chips and
then apply another layer of whipped cream with coffee. - Mix neutral gel with ganache and pour this on top of the coffee layer.
- Let it set in the fridge overnight.
