Looking for a new ice cream flavor? What about homemade blackcurrant ice cream? This refreshing summer treat will definitely satisfy your sweet tooth!
Do you Know Blackcurrants are one of the super fruits! They have more vitamin C than oranges and contain more antioxidants than blueberries.
Ingredients:
- Black raisins – 15 -20 pieces
- Whipped cream -1 cup
- Milk – 1 + 1/2 cup
- Milk powder – 1/4 cup
- Corn flour – 1/2 tablespoon
- Milkmaid – 1/4 cup
- Salt – A pinch
- Sugar – 1/4 cup
- Vanilla essence – 1 teaspoon
- Black current essence – 1/2 teaspoon
- Purple food color – as required
Method:
- Soak black raisins in 1/2 cup milk, grind only black raisins coarsely.
- In a bowl, mix milk, cornflour and make a lump-free mixture.
- Now add sugar, milk powder, salt, and vanilla essence.
- Boil the mixture on slow to medium flame. Cool it.
- While it is cooling whip the cream until stiff and keep it aside.
- In the Cooled mixture add milkmaid, Whipped cream, and mix it well.
- Then, add black currant essence, black raisins, and purple food color.
- Mix everything and set it in the freezer overnight.
Tip:
- Use lid containers to set ice cream, or use cling wrap to cover it, so ice will not be formed.
- Can add cream cheese more or less according to your taste.
- For sweetness, we can add or reduce the castor sugar quantity.
Dos & don’t:
- Don’t over whip the mixture after adding whipping cream.
- Do set it overnight for better texture.
