These Strawberry Lemonade Cupcakes are so pretty and perfect for spring or summer. These strawberries lemonade cupcakes are moist, perfectly fluffy, and bursting with fresh fruit flavors. The cupcakes have a delicious slightly tangy lemon flavor. Fresh lemon zest and freshly squeezed lemon juice give the lemon flavor.
Ingredients:
- All-purpose flour – 3/4 cup
- Curd – 1/2 cup
- Oil – 1/4 cup
- Baking powder – 1/2 teaspoon
- Baking soda – 1/4 teaspoon
- Vanilla essence – 1/2 teaspoon
- sugar – 1/3 cup
- Lemon juice – 1 tablespoon
- Yellow food color – 2 to 3 drops
- Lemon Zest – 1 piece
- Salt – 1/4 teaspoon
Center Filling:
- Cream Cheese – 2 Tablespoon
- Powder sugar- 1 tablespoon
- Strawberry crush – 1 tablespoon
- All-Purpose flour – 1 tablespoon
- Baking powder – 1 pinch
Frosting:
- Whipped cream – 1/2 cup
- Strawberry crush – 2 tablespoon
- Strawberry essence – 1/2 teaspoon
- Pink food color – 2 to 3 drop
Method:
- Preheat the oven at 170 degree for 10 minutes.
- Sieve flour and salt.
- Take curd, sugar and whisk it.
- Add baking powder, baking soda, whisk it and keep aside for 2 minutes.
- Add oil, essence, color, lemon juice and zest.
- Add flour and mix it and add yellow color and mix it.
- For the filling, take powder sugar, cream cheese, strawberry crush, flour and pinch of baking powder and mix it.
- Pour cupcake batter in cup cake mould as shown in video, then add filling and finally again the batter.
- Bake it at 170 degree for 15 to 20 minutes.
Frosting:
- Take whipped cream and add strawberry crush, essence, and pink color and whisk it.
- Frost your cupcake.
- Garnish with a piece of strawberry.
